Taco Salad
Ingredients
1 head lettuce, shredded
2 cups whole kernel corn
2 cups black beans
2 cups cooked white rice
2 cups shredded cheddar cheese
4 tbsp. sour cream*
2 tbsp. lime juice*
2 tbsp. cilantro*
* optional but recommended
Toppings:
Queso (I prefer queso blanco! You can mix in a little milk or water to give it more of a drizzling consistency)
Crushed tortilla chips
- Add ingredients to a large bowl.
- Mix. ♥
Notes
♦ 1 pound of cooked ground beef may be added along with a packet of taco seasoning. Cook the beef until thoroughly brown, then add the seasoning, corn, black beans, and rice. Stir consistently until warm. Add these to your salad bowl along with the other ingredients.
♦ 2 cups roughly equals one 15 oz. can.
♦ Rice must be cooked ahead of time. If you want a quicker option, two bags of 90-second microwave rice should work!
